Benchtop & Splashback Installation

Hi, I have purchased some laminate benchtops from Ikea that I would like cut to size & installed (needs holes to be cut for sink and gas cooktop, and shortened slightly in width).
I also need some splashbakcs installed. The walls need prep, I have removed the old tiles, but in some areas the mortar has come off and is back to bare brick.
I am going to purchase a splashback (made from polymers, not glass), that also needs to be cut and installed around powerpoints/cooktop and window sill.
Would like someone to come out to quote and advise.
Kitchen is U shaped in a 1 bedroom apartment, benchtop total length is about 5m, and splashback area about 3.6m2
