Repair of grease filter & water drainage problem in shop

A small food shop located inside westfield shopping centre, because its location is not in the food court area, not sure if it connect to grease trap. but currently the grease waste is connect and drain through some kind of filter to sink area. the filter seems to be broken, and the water are overflow out and flood in the floor.
we need to know what is the issue and how soon can it be fixed.
