Replacing water pipes in the wall

The house is old and there are steel pipes. They are rusted and one has burst. Another plumber dug through the wall and found the problem but is too busy to do the whole job. There are a few metres length of pipes in the wall that needs digging out and replacing with copper. Currently we have no water so this is an urgent job. Can you help?
